I can make griddle cakes out of corn muffin mix, biscuit mix, or brownie mix. Find the mixes that only need water and mix them up in a zip lock bag or the package they came in. A griddle cake is like a taller pancake. You use a light weight frying pan and a light weight metal plate for a lid. I use a none stick MSR fry pan and a titanium plate. Put a big dollop of the mix in the fry pan, put a lid on it with low heat. Flip it after a few minutes and fry the other side. It is just like making a pan cake but with a lid over low heat. Most of the mixes with rise up and inch and a half.
